そして、磯沼さんの雰囲気もおおらかですごく素敵な方で、どんどん引き込まれて行きました。
磯沼ミルクファームのチーズ開発を、私がいろいろと工房に見学に行った経験や、イタリアでチーズづくりの（少ないですが）経験があったので、商品開発に携わらさせていただきました。
試行錯誤を繰り返し、時には失敗し、温度やpHの調整を何度も何度も繰り返しました。
徹夜をし、なんとか初めての催事に出せるまでになった時は本当に感慨深いものがありました！！
そして、牛乳も磯沼さんのミルクをコラボとして使わせていただけることに。
